Lindsey Thompson received her bachelor’s degree in dietetics/human nutrition from the University of Central Arkansas in 2006.  She then moved to northwest Arkansas to study health science, earning her master’s degree in 2008 from the University of Arkansas. While working on her masters, Mrs. Thompson empowered others by emphasizing fun and exciting ways to learn about nutrition through teaching and public speaking.  She created and led women’s groups and taught university courses that encouraged healthy body image, positive thinking, and self-care through nutrition. She reached hundreds of students on campus through sorority, dorm, and student club meetings.  

For the next year, she worked as a nutrition assistant for the University of Arkansas for Medical Sciences (UAMS).  During her time at UAMS she assisted clinical dietitians with day-to-day tasks, while organizing all length of stay and educational appointments for a 450-plus-bed hospital.  She was instrumental in the implementation of Computrition nutrition software, analyzing food and menu items for restrictive patient diets and conducting food preference entry and menu analysis.  Having gained the experience necessary, she applied for and was accepted into the OHSU Dietetic Internship for the 2009-2010 year.  She passed her RD exam in August of 2010 and became a credentialed dietitian. 

Currently working as an administrative dietitian at OHSU, Lindsey works closely with other dietitians to educate preschool children on proper nutrition, assists in developing training manuals for employees affiliated with the room service meal delivery system at OHSU, and utilizes CBORD software to develop a hospital wide menu labeling system.  

Personally, Lindsey is a thriving vegetarian and firmly believes that a plant based diet is achievable and will change your life!  
She lives in Portland and enjoys cooking with her husband, learning to sew, and taking hikes with her 
rescued dog Adel.
